Colo is an upcoming restaurant in the heart of West Chester, Pennsylvania. The name comes from the Latin verb colō — to cultivate, to care for, to inhabit, to honor. It's a word about people and place, and it's the principle behind everything we're building.

What we're building

Colo will be a seasonal, chef-driven restaurant and cocktail bar. Our kitchen focuses on locally sourced, ingredient-forward cooking that changes with the seasons, paired with a cocktail program built around small-batch spirits and house-made ingredients. The restaurant will offer a seated dining room, a bar for walk-in guests, and a private dining space for hosted events.

Before we open — and after — members of our private line are invited to preview dinners, cocktail events, chef collaborations, and behind-the-scenes tastings, and receive first access to our grand opening, limited-capacity events, and last-minute reservations.

This is the quiet beginning. No menus to memorize yet, no reservations to fight for — just a private line for the people who want to be there first when Colo opens.
